Elazig Astragalus Honey

Product Description and Distinctive Features:

Elazığ Clover Honey is a natural bee product created when bees gather nectar primarily from clover blossoms and other native flowering plants specific to the region. Classified as a type of flower honey due to its floral origin, Elazığ Clover Honey is available to consumers in both filtered and honeycomb forms, depending on the production method and market preferences.

Clover plants in the Elazığ region typically grow in cushion-like clusters. Their leaves are feather-shaped with thorns, and their ends are oval and pointed. The flowers come in shades of white, yellow, purple, or pink, usually blooming in bunches. At lower altitudes, clover blooms around May and June, while in higher regions, the blooming period may extend into August. Clover plants that are richer in nectar tend to have more vibrant and noticeable flowers. These plants are especially found in natural steppe landscapes stretching from the north to the south of the city center. In Elazığ, the tradition of producing Clover Honey has continued for generations, sustained by local beekeeping practices.

Elazig Astragalus Honey

In Elazığ Clover Honey, the high concentration of clover pollen (Astragalus spp.) is a defining feature, as confirmed by melissopalynological analysis. Influenced by the region’s unique climate and plant diversity, the dominant pollen type in this honey is from clover (Astragalus spp.). In contrast, the secondary pollen content typically includes species from the parsley family (Apiaceae), daisy family (Asteraceae), rose family (Rosaceae), and thyme (Thymus spp.).

The nectar within the clover flowers used to produce Elazığ Clover Honey is usually found deep inside the blossom. This floral structure aligns well with the region’s conditions, making Elazığ an ideal location for honey production. To maximize nectar collection and ensure adaptation to the local environment, beekeepers in the area commonly use the Caucasian Honeybee (Apis mellifera caucasica) and the Anatolian Honeybee (Apis mellifera anatoliaca) breeds in their beekeeping practices.

The sensory qualities of Elazığ Clover Honey include a clear appearance, various yellow hues, and a pleasant aroma reflective of the local flora from which it is derived. It offers a naturally sweet flavor that is gentle on the throat, without any burning sensation. This honey also features a smooth, fluid consistency and crystallizes slowly over time.

Key characteristics such as the pollen ratio, as well as the color, taste, fragrance, and aromatic profile linked to the region’s vegetation, can vary depending on factors like beehive location, annual climatic conditions, nectar availability, and the harvest season. In Elazığ Clover Honey, clover pollen must constitute a minimum of 45% of the total pollen content, confirming its classification as a unifloral honey. Due to its dominant botanical source, this product is recognized and marketed as "clover honey."

Production Method:

Elazığ Clover Honey is produced and offered to consumers in accordance with the Turkish Food Codex, available in both filtered and honeycomb forms. During its production, no external substances, including food additives or other ingredients, are permitted to be added, ensuring the product remains pure and natural.

The honey is obtained through both stationary and migratory beekeeping practices. Harvesting typically takes place in August and September, while preparations for winter maintenance of the hives are completed by October. Activities such as pest control and the regulated use of pesticides are carried out according to official guidelines, with a strong focus on maintaining technical and hygienic standards.

In Elazığ, beekeepers generally keep their hives in sheltered areas during winter. When weather conditions are normal, hives are nourished with either honey derived from local flora or a sugar-water solution. Spring preparations usually begin in March. Beekeepers inspect the nutritional condition of the hives, monitor the queen bee’s egg-laying activity, evaluate the number of worker bees, and check for any signs of disease. Routine tasks also include the cleaning and repair of hive bottom boards and the replacement of any damaged parts.

The months of May and June mark the period when beehives are relocated to the fields. Once the bees begin gathering nectar, no supplementary feeding is provided. The harvest season generally takes place in August and September, although it may begin as early as July in years with unfavorable climatic conditions.

At the onset of the harvest period, beekeepers begin collecting honey at their designated apiary sites. Honey intended for filtration is usually processed using food-safe filtration equipment directly in the apiary. The filtered honey is initially transferred to resting tanks that are safe for food contact, where it is allowed to rest for a minimum of 3 days. During this resting period, air bubbles and larger particles settle, resulting in a uniform and clean appearance. The honey is then passed through fine filters for a final round of purification, eliminating any remaining impurities.

Packaging, Storage, and Preservation: The honey is packed in food-grade containers as determined by authorized food operators. Only the honey that meets pollen content standards and complies with the Turkish Food Codex is labeled with the required legal declarations. From the point of packaging and filling until it reaches the final consumer, Elazığ Clover Honey is preserved in clean, dry environments, kept away from direct sunlight, unpleasant odors, and stored at temperatures not exceeding 25°C.
